Let’s talk favorite foods for a minute. I don’t know about you, but I’m the kind of eater who finds something she likes and can literally eat it every day for months on end, until gets to the point when I can pretty much never handle seeing the food again. I couldn’t get enough of Honey Nut Cheerios for breakfast for about six months straight, went through an everyday Greek yogurt phase for several weeks, and ate enough granola bars on one camping trip to not be able to stomach the thought of another one ever again.
But the one food that’s managed to escape the sooo-over-it mental switch is a Thai chicken salad. I pretty much lived off of the Thai Chicken Crunch from Just Salad for an entire year of lunches, and when I have the extra time, my favorite recipe to make is the Chopped Thai Chicken Salad from Pinch of Yum. If you’re looking for a healthy option with staying power, I’d highly recommend it. Now excuse me while I go bury myself in the never-ending perfect combo that is chicken, cabbage, carrots, peanut sauce and lime. <3
