I’ve already alluded to how I tend to find a food combo that works for me, and eat it non-stop until I can pretty much never touch it again. Well this blog posts pays tribute to my favorite salad when I lived in California, when life was as good as the Corner Bakeries were plentiful. Since they are fewer and farther between in Seattle, I’ve developed my own version of their Harvest Chicken Salad. With mixed greens, walnuts, creamy gorgonzola cheese, tangy currants, and bright green apple slices, drizzled in a balsamic vinaigrette — it’s perfection, in salad form. You may add spiced chicken breast if you like, but I enjoy it just as much without. Eat, and enjoy!
3 cups mixed greens
1/2 granny smith apple, cut into thin slices
1 oz. walnuts
1/4 c. currants
1/4 c. gorgonzola cheese
2 T. balsamic vinaigrette
This is an easy one. Slice half of a Granny Smith apple into extra thin slices, and toss all ingredients together. Viola!
