Healthy Breakfast Recipe: Peanut Butter Oatmeal

I’ve always ebbed between love/hate phases with breakfast. I’ve never been someone who has to have it, but I try to give my body enough fuel to get me through the morning and into lunchtime, when I really start to feel the hunger pangs. So, I’ve been trying to make friends with breakfast — that is, find a healthy breakfast recipe that is tasty enough that I actually look forward to it and want to make time for it in my routine, and nutritious enough that it keeps me satisfied and going strong all morning. And lo and behold, I found a recipe that fits the bill!

This peanut butter oatmeal is full of healthy grains, protein, fats and fruit. I mean. I even add some flaxseed and/or chia seeds for heart-healthy omega-3s. There are so many variations that you can use on this recipe to squeeze in extra nutrients, sweetness, saltiness, and flavors. But my favorite current combo is this:

1/4 c. oatmeal
1 T. peanut butter
1 banana
1 T. flaxseed
1 T. coconut flakes
1 T. honey
1 pinch salt

Simple heat up the oatmeal for one minute in the microwave with a little bit of water, then add your toppings and enjoy.

    Delicious and pretty! I am the type of person who HAS to have breakfast. If I haven’t eaten two hours after I wake up I get super grumpy… no good. I also love making baked oatmeal over the weekend and having a little bit each morning. yum!
